Carabao, the most prevalent variety of mango in the Philippines can be found in markets throughout Southeast Asia. It is usually eaten ripe, like a mango for dessert, but is also used when green. The fruits are long and slender, with blunt apex, and is usually rather small, 250 to 350 grams. Green when immature, gradually changes to a lemon yellow when ripe. The meat is completely without fiber, soft and juicy, sweet and aromatic flavor and a slight acidity. Carabao is exported to Asia and Europe, but not common, and usually available only in ethnic markets. Two Mexican mangoes, Manila and Ataulfo, often compared to Carabao in terms of size, color and flavor but is different in this. Its flavor is a mix fruit and ginger flavor, with hints of lemon and pineapple long.
